    Hi Carol:
    AFTER watching the video, I can see several “operator: errors….I now realize what I did wrong………can I grind potato flakes in my vita mixer to use in place of potato starch? If so, what is the amount?
    Almost burned up my Cuisinart Food Processor……..Kitchen aid is on the way !

      Pat, I would recommend using potato starch that is already ground up into flour. That way, it is consistently the same each time. I have never ground potato flakes into flour, so can’t say how that works. My concern is the stuff that is already in the potato flakes and how that affects baking.

    Love your recipes..would love if you could post any cake/cupcake recipe..mine are always so thick I can’t even spread them in the pan..they seem more like bread recipes. Would love to see where I am going wrong and what the consistency should look like. Thanks so much!
