Food Predictions for 2011

There is no shortage of predictions about what we will eat in 2011. I have condensed the predictions of many into a summary below.

McCormick, one of my favorite spice companies, predicts the following:

Spice consumption in this country is at an all-time high – growing more than three times as fast as the population and currently exceeds 1 billion pounds per year.  Today’s pantry can consist of about 40 different seasonings, compared to less than 10 in the 1950s. I don’t think my mother’s pantry had even 10 spices back in the 1950’s. My, how times have changed.

McCormick’s identifies 5 currents of change:

[1] Spirit of Discovery – A hunger for international culinary adventure propels exploration of new ingredients and techniques

[2] Flavor with Benefits – Eating for wellness is more delicious than ever

[3] Invigorating and Uplifting – Exciting pops of flavor bring new energy to dining (see flavor pairings below)

[4] Soul Satisfaction – Comforting favorites soothe the mind, heart and taste buds

[5] Craveable Contrasts – The interplay of tastes, textures and visual cues adds fun and excitement to the basic pleasures of eating
